The Forge reigns supreme as Miami’s most decadent steakhouse but now, with a menu remake from executive chef Christopher Lee, the place is also serving selections that are succulent, satisfying and suitable for vegetarians. Sure, taking center stage is the 40-ounce dry aged prime tomahawk chop and the bone in dry aged porterhouse. And you can’t miss the seared foie gras with glazed doughnut and citrus. But a standout starter is the English Pea Ravioli with a sweet onion nage that’s foamed, making the sauce light but definitely not lacking. Rather, you can taste the time that goes into every bite of pea puree, garden vegetables and herbs in al dente pasta. Also to kick off your meal, there’s a kale salad, for which the greens are made manageable by being tightly diced and tossed with dried currants, pine nuts, and parmesan lemon vinaigrette.
