Fairchild Garden's Valentine's Day Concert

Valentine's Day at 5:30 p.m.

The enchanting vocals of Renée Olstead will make your Valentine's Day a night to remember! A Joy Wallace Recipe for Salted Chocolate - Olive Oil Mousse

Serves 8

Salted Chocolate - Olive Oil Mousse
6oz Dark Chocolate Chips
3 Eggs, separated
2/3C Powdered Sugar
3/4C Extra Virgin Olive Oil
1/4C Espresso
2Tbsp Brandy
Maldon salt
• Place the chocolate in a double boiler and melt. Once melted, remove from the heat.
• In a mixer whisk the egg yolks and sugar until light and fluffy. Lower the speed and drizzle the oil into the egg mixture. Once incorporated, add the espresso and brandy and finally the melted chocolate. Make sure the chocolate and coffee are both room temperature.
• In a clean bowl whisk the egg whites until firm peaks form. Fold the egg whites into the chocolate batter. Place the mix in the refrigerator and allow to set for 2 to 3 hours.

8 Thin Slices White Bread
Olive Oil
Kosher Salt
• Preheat the oven to 350 degrees
• Brush the bread with olive oil and sprinkle with salt, cut into desired shape. Bake until golden brown.

Final Serving Instructions
• Spoon the mousse on to the plates, drizzle with Extra Virgin Olive Oil and sprinkle with Maldon Salt. Serve with the crostini. Enjoy!
