Chef Michael Gilligan keeps it simple
Everyone in social Miami is fully aware that the W Hotel has captured the South Beach scene. With fabulous fashion affairs and exclusive events becoming the norm at this latest Miami Beach ultra-lux hotel, Solea, owned and operated by restaurant veterans KNR Food Concepts, has evolved into one of Miami’s top restaurants for foodies in the know.

From tender crab cakes to lamb to Black Diamond filets, Executive Chef Michael Gilligan keeps his dishes simple and prides himself on only using the finest ingredients. This British born chef who directs a culinary offering of modern cuisine is young and talented, learned and creative. His forward thinking take on traditional dishes blends perfectly with the inspiring and innovative style of W South Beach.
The salmon Carpaccio, made from sea salt, mint and lemon vinaigrette is very light – a fabulous dish to start. Another light starter is the lobster prepared with tomato, roasted peppers and lemon zest. Of course, one can’t wrong with the croquettes and/or scallops prepared in a chili-garlic wine sauce.
If you’re in the mood for a heavier beginning, then the wild mushroom ravioli with truffles and a sage demi glace is wonderfully thick and rich. The albondigas (Spanish meatballs) are prepared with Rioja, tomatoes and onions.
For a main course, the grilled Black Diamond filet mignon is tender and soft – truly decadent. The Columbian River salmon is prepared with asparagus, fingerlings and a tangy citrus dressing. Chef Gilligan adds a little added twist to this dish by serving the crisp salmon skin on the side. It’s delicious.
